I make it all the time following a recipe I learnt whilst living in Cyprus....
Brown minced lamb then drain the fat.
Add chopped onion and a little olive oil, cook until the onion goes clear.
Add chopped tomatoes, oregano, thyme, a couple of bay leaves and for the authentic taste a cinnamon stick.
Simmer for about 30 minutes.
Slice aubergines, salt them lightly, then press them to draw out the juices. When they have lost a lot of fluid, rinse them to remove the excess salt, dry in a tea-towel, flour lightly then fry until golden in olive oil.
Make a bechamel sauce with flour, butter and milk... adding some cheese when it is thickened.. I like gruyere or emmental. When the bechamel has cooled right down add a few beaten eggs.
In a overproof dish place a layer of aubergine, then a layer of the meat sauce alternately until it is all gone. Pour over the bechamel.
Cook at about 180c for up to an hour.
Let it cool slightly before serving...
