My dad used to put the beef in a mix of salt, sugar and spices for a few weeks until the outside was fully dried, then change to just salt and spices for a few more weeks... then wood ash....

You can cure with saltpetre to get the typical red colour of pastrami, nut all those nitrites are now being links to C.P.D.....
