Can I leave them there until needed?
Or is it best to pick as soon as they go red

They will actually ripen to the point of rotting if you're too late, just go for the reddist colour... not at all like supermarket cr@p. And take a good sniff too...

They will go soggy and the flesh will rot if left too long. It's part of the seed releasing process.   Best eaten on the day of picking. (Even better plant to mouth).  If you want a 'shelf life' then pick anything from orange/red to off green.  I can usually pick dad a bagfull to last from 'eating today' to 'eat in two weeks today' when he goes off to the van for a couple of weeks.  Experiment and learn from experience.

Yellow pale.  a long way to go.

Outdoor or under glass?

Never succeeded outdoor here.  You may be far enough South to succeed
I jumped off a bridge in Paris.

Don't forget tomato feed now, and lots of it, the spuds will be swelling now, and they are as thirsty as a thirsty thing.

NPK with higher K, in other words anything marked "tomato feed". Loads about inc Doff, Tomorite, etc. Designed for any flowers and fruit.
